I'm not familiar with iPhones.
I'm visiting my Mom for two days.

My mom gave me an old iPhone she hasn't used in years.
What do I need to do while I'm with her to get it registered to me and not
to her? It is an old iPhone and hasn't been on a network in years.

I charged it to 100% and went to the gear settings icon.
It's still logged in as her.

In Settings > General > About it says the following
Name = iPhone
Software Version = 12.5.5
Model Name = iPhone 6 Plus
Model Number = MGCK2LL/A
Serial Number = 12 characters
Network = Not Available
Capacity = 16 GB
Available = 1.98 GB
Modem Firmware = 7.80.04

What do I need to do to de-register it from her while I'm still visiting?

Are you sure you can just reset it?
What if it has the Find My crap on it?

You probably aren't aware of how Android does it but if you simply follow
instructions to reset Android, you're screwed forever (after Android 9).

You can't factory reset most Android phones without deleting the Google
Account first, even though almost no instructions say to do that.

You have to first know how to bypass the Google Factory Reset Protection.

Given that Google has Factory Reset Protection on most Android phones,
are you sure Apple doesn't have something similar to prevent any random
person from resetting the phone without first REMOVING the Apple Account?

Are you sure you can just reset it?
What if it has the Find My crap on it?
Have tried doing it? You can check it worked by logging into your mom's
Apple account in a browser and see the iphone no longer shows up as a
device.

basically:

First: backup her data if she wants to keep those.

Turn off Stolen Device Protection.

Then disable location tracking of the device. (Find my phone).

Finally, in settings -> General -> Transfer or Reset

... and follow the bouncing ball.

Just doing a simple factory reset may be enough, but having old devices
cluttering up her account could cause issues later on - for example,
there is a limit to how many devices an account can have for some
features.

That means it's best to first log out of everything. Go through the process at

You may also need to log in to her Apple ID account and remove the
iPhone from the devices list, as per the final step.

After that, you'll need to create your own free Apple ID, if you
haven't already got one, as part of the resetted iPhone's set-up
process.

Otherwise it will never work correctly and qualifies as stolen.
